Can somebody who has connected Apple TV device to HomeKit comment on what you can do with your iPhone then? Can you turn on/off, volume up/down, etc what else? Not referring to using Apple TV as HomePod

Besides use the "TV remote" app to use your phone as the Apple TV remote?

You can pause and resume streaming, adjust volume, fast/skip forward and reverse, and select speakers default.

It looks similar to your watch display when you use your iPhone to stream.

You may be able to do more with homebridge.
