add video to ipad/iphone?

Any one knows how to do a backup to the Mac since iTunes is no longer available? Also how to add videos to the iPad?
 
It's all now done via Finder. Plus you device in and then in Finder select it. After that it's pretty much as you would have done in iTunes.
