Added 16gb (8+8) but the computer only shows 1 slot filled (8gb) and the other empty. This is MacBook Pro 2.2 ghz intel core i7 running osx lion 10.7.5. Any thoughts as to why the second ram stick isn't picking up?

What year is it?

Some Macbook pros (like my mid-2009) can only take up to 8 GB of RAM.

This happened to me when I installed more RAM in my Mac mini. Embarassingly, I just hadn't installed the second stick properly. Try opening it up again and remove the stick. Make sure it clicks into place.
 
Yep, sounds like you just don't have it seated properly. It can be a bit tricky to know just how much force to use on some machines. As has been said make sure that it "clicks" in and that the bottom stick is fully horizontally seated. The top one won't always go into full horizontal, but the rounded alignment guides should line up with the rounded pegs if you push it down. If they don't, you'll have seating problems.
