Adding a 2nd hard drive for data. How do I move my Home Folder?

I just picked up a 2nd hard drive for my Mac Pro. I would like to make one drive for my apps/OS, and one drive for my data (Home directory).

Should I clone the drive and delete everything but my Home directory? Or copy my home directory to the new drive and delete the source one from the old drive? How do I pull this off w/o a reinstall?
