I'm looking for a way to highlight an email address (found on the web) and right click on it to open mail with that email address in the "To" field.

This is one functionality I'm looking for.

To take it further, I'd like the ability to have a set subject and set body printed into that email and have it sent.

Any programs or methods to do this?

In case you are not aware, the mail-to-address functionality already exists in the Safari/Services menu, and you can additionally assign a hot-key to invoke this function on demand.

Thats great. Do you know how to assign a hot key to this?

In System Preferences, Keyboard, Shortcuts, select Services and locate the "New Email to Address" service. When you select it, a button labeled "add shortcut" should appear.

No. There is a different service for that - but unfortunately no combination.

Which service?

If you highlight/select text (pretty much anywhere), you will have another service in the Services menu called "New Email With Selection" which starts a new email with the selected text in the body of the email (no subject, sorry).
