Adding field in Address book

Noob here. How do you add a field in the address book. Want to add "Birthday"

what about anniversary?
somehow I have that field, but at a friend's house tonight (Lion) and there wasn't an option to add the custom line.

It's under Dates. Default is anniversary but has a custom option.
