I read about some ways to do this in iMovie 06, but have yet to find a way to have subtitles in iMovie 09. I'm creating a project for school and needed to have the caption below the video.
 
HI, I had to look at a project i did to remind myself.
Open your project
then click the T to the right to open the titles choices.
Now choose a style, the one you mentioned is one I generally use with a gradient.
Drag it across to the project area. If you let go between clips it creates a clip and gets you to choose a background, you need to drop it on a clip to add it as a superimposed title. you then click on the text on the small screen and put in your own text.
