When i'm trying to send a file (such as a PDF) to another app from Dropbox or Safari, I get a list of ten choices. Is there any way to control the contents of this list?

The " Open In " list is a list of apps in your device that can open that file format.
So you can't really adjust which apps appear unless you delete an app.

I know what it is, but i have a lot of apps that can open PDFs, for example, and now i can't get them into the apps i want

Found some threads where it was suggested that deleting iBooks removed the 10 app limit on the list for some folks. Didn't work for me though

Annoying, I know. I understand we'll get better control over the list in iOS 6. Can't wait!

Well if your issue is the 10 app limit then I guess there is no way to increase the number, but if you were trying to get a file to a specific app which does not appear in your open in list then you can copy the file to the documents folder in the app's folder
You can use iFun-box software or even iFile (if you have a jailbreak)

my usage is mostly from Dropbox while on the go
