Have attempted to see what the difference is between the apps, but wondered if anyone had much in the way of experience. As a member of a university both will set me back similar amounts.
 
I have no experience with the Nuance product. However, my experience with PDF is that it is an industry standard that everyone implements differently. When you absolutely must have a PDF that works everywhere with no excuses, then print to PostScript which is then converted to PDF via Adobe Distiller, a part of Adobe Acrobat Pro.

The only reason to consider a non-Adobe PDF product is that it costs less. If you do not pay less, then you have no legitimate reason to buy from Adobe's competition.
