Hi, I'm currently using a mid 2010 MBP with 8gb of Ram and it has a 2.4 GHz Intel Core i5 processor. love this computer very much but I think it's time to upgrade because I'm running pretty track/plug-in intensive sessions if Logic Pro X. For everything else the computer is perfect, but I'm dealing with a lot of crashes/lagging and, frankly, the computer isn't powerful enough to handle what I need to do in Logic.

That said. My budget is about $1500 (Maybe $1600) and I'm sort of unsure what computer (and where to buy it) that will handle my requirements. An apple refurb seems a little out of my budget since I would have to buy after market ram but I'm very wary about going to craigslist, where the deals are much better.

Any suggestions on what model and where to buy it?

I'd say the only thing that fits in your budget is the 13" MBP both the older cMBP and the low and medium rMBP. Those being dual core however mean you may still have performance issues.

There's a couple of quad core 15" MBPs refurbs for under 1600 available.
