I recently upgraded to a new Macbook Pro that has 4 thunderbolt / USB C connections. I am looking for a good docking station that supports ...
  • Two HDMI monitors
  • Gigabit ethernet
  • Power delivery
  • USB 3 connections (USB A at minimum, USB C would be good too).
  • Have a single connection to the computer
  • Support both MacOS and Ubuntu Linux (on a different computer)
Any suggestions?

Fortunately for me any Windows or Linux installations are likely (hopefully) to be in VM's.
My work gave me a HP EliteBook with Ubuntu and it has a TB port, so I figured it would be convenient to be able to just swap that with my Macbook when I wanted more screen real estate.

Understood. I'm not sure how successful you'll be looking for a dock that supports all 3 OS types.

Do you need “native” displays or is DisplayLink ok? There are DL drivers for Ubunutu but as these are essentially USB monitors performance may not be quite as good as a native solution
 
Look at the Dell WD19TB dock. The only one I don't know about is the Linux support. But it checks all the other boxes and I use one daily with my Mac with no issues.

Are you using the Dell WD19TB with your M1 MBP? Is if fully compatible?
I'm actually torn between getting this TB dock or going with a "validated" USB C hub like the Caldigit Dock, Kingston Nucleum or even the Apple AV adapter.
