iPod touch After jailbreak question

okay so i jailbroke my ipod touch 2G
now i plugged it into my computer to sync all of my music back
when i plug it in it asks me if i want to set it up as a new ipod or restore from a previous backup.

what do i do to keep my jailbreak safe?

also can someone help me with using cydia and winterboard and stuff or direct me to a link that will help?
