After unlocking iPhone 5, how does data work on other carriers?

I am with ATT thinking about unlocking it via one of the many IMEI services.

If I got overseas and pop in a prepaid aim card, I understand that I'll have however amount of minutes...

But how would data work?
 
You will need a sim with a pay as you go data plan. That or, end up paying a lot of money for data charges.
