How do you access Air Display in Mac OS X Lion? I can't seem to find it anywhere. Any help would be appreciated, thank you!

Air display is a third party application that allows you to wirelessly extend your desktop.
Once you've purchased Air display on your device (supports Windows/Mac's/iOS devices IIRC) go to their site and download the necessary software: http://avatron.com/apps/air-display

AirPlay mirroring and Air Display are two different things. The former, which will be integrated in Mountain Lion, uses Apple TV to stream Mac displays to an HDTV.
Air Display, an app, is a different animal. It allows you to use an iOS device, Mac, or PC, as a second monitor. The iPhone and iPad can also be used as input devices for the connected computer.
