If I am streaming an MKV via my Air Video app and Air Playing that to my Apple TV 2, will I be hearing the HD audio, or will it just be regular Dolby digital?

The aTV doesn't support HD audio.

as to how air video deals with surround audio, i'm not sure if you'll get stereo or dolby digital.
 
At the risk of sounding ignorant, can it convert it to LPCM and play that?
