So there are times when I am going to want to put the watch in airplane mode (at the movies, working out without my phone, at work meetings, etc.). My question is, does the watch still track steps, etc. Basically do everything that it does when the phone is not around? I would assume it does, but wanted to get some verification from someone who has the watch. Basically what can it do in airplane mode.

Airplane mode turns off your Bluetooth. So any apps that have to work directly off of iPhone will not work. Since apple watch uses sensors to track your workout, i think you will be fine, as well as telling time.

You should use Do Not Disturb for all those things. No need for Airplane Mode.

Apart from anything, presumably you're doing this to avoid disturbing others in your meetings, etc? If you hit a move/stand goal - or even just get prompted about it, which the watch is capable of doing without bluetooth, it's still going to make a noise. Do Not Disturb eliminates all of this. You tap it once on your watch, and both your watch and your phone are silenced.

Airplane mode disconnects the Watch from your iPhone, however your Watch will still be able to count your fitness and then sync to your iPhone when connected to Bluetooth or Wi-Fi.

I recently flew with watch. I put phone in airplane mode and watched mirrored as it should. I took iPhone out of airplane mode and watch stayed in airplane mode. Is airplane mode disconnecting watch from iPhone, is this a standard feature?

I also flew recently and put the Watch into Airplane-mode which also puts the paired phone into Airplane mode. Coming out of APM I had to do them individually of course because there is no communication between them in APM.

Any word how how many days or how much information Apple Watch can store while in airplane mode? Let's say I kept it in airplane mode for a week but worked out all week using it, would everything carry over one I was no longer in airplane mode?

All the information will sync with your iPhone once it its connected. I am recently testing out the S8 Plus and OnePlus 5 for the last two weeks. I decided to sync all my exercise data to my iPhone and it was all there. The Apple watch can still function as it would normally would, however you will not receive any notifications.
