I am new to the whole Apple world (and the switch from Windows/Android is everything but really smooth so far).
I bought a MBP 13" 2020 last week, because my wife is a hardcore Apple user and we agreed to a notebook together.

What I want to do is the following for my work (sounds like a quite easy task, but I dont get it done with Apple):

I want my MBP to show a certain Word Document (or Page Document) where I edit and update new words and phrases in front of a customer. My customer though shouldn't see what I am doing on my MBP (he sits opposite me) and therefore has an iPad showing him only the data I give him on the certain doc file.
The iPad is from my wife, bought this year in May and runs the newest Ios 14.1.
I also setup the MBP with her Apple ID and connected the devices via Airplay. (why AirPlay works only on devices with same Apple ID, makes the whole function pretty useless imho).
Now I can setup the Airplay settings, so that the iPad "mirrows" exactly what I do on the MBP, but I cannot fix a certain window or document to show constantly on the iPad.
I dont want my customers to see what I do in the background (checking mails, surf browser, etc.), but I want them to see only what is on a certain document on the iPad. Can someone help me? There must be a function to fix or freeze for a certain window on iPad. This is quite easy to do on Windows devices, but I cannot get it done with my new setup.

I read this article and I was able to drag my window I want to show to the iPad, but then its away from my Macbook, and how on earth can I then update and edit the document :D?
I need this for a professional environment and cannot ask the customer to always wait until I edit the document on my screen before showing it. I want to have the document open on both devices simultaneously, but other than on the iPad the MBP should also be available for showing other windows on the same time (like safari, notes, emails...).
 
For now I switched to Google Docs to get my work done. It is synchronizing almost in live time and it gets the job done, however the client always needs to scroll to the point where I am writing/editing which is not very ... professional or what I want ... but better what I could do with my Apple integrated software.
Maybe in the future I get Apple to do what I want
 
Excuse me, Sir, but I am curious, as this functionality would be helpful in my job, too. How did you achieve this screen-doubling in Windows before you switched to the Mac?

Unfortunately, Google Docs is not an option in my organisation...
