My iPhone is currently on 11.3 beta and my Mac on the stable 10.13.3.

I had one AirPod in connected to my iPhone, and when I put the second AirPod in it connected to my Mac. This meant that they were connected to 2 devices at once, which I've never had happen before, and different audio was playing in each ear. Useful bug!

Yeah, I’ve had this happen twice, briefly. I use them a lot one at a time because I work on video conference all day. Both times what has happened were that earlier in the day they had been paired with my iPad for work. Then I went to the gym, paired them with my phone for my workout, then came back home and worked some more. So, I had one in, paired to the IPad, then it starts to run out of power, so I put the other one in without taking the first one out, because I’m still on conference call. And briefly the second one pairs to my phone, before it “realizes its mistake” and switches to the ipad. It’s pretty sweet, and I wish we could actually do it intentionally.
