I have never used headphones for my Apple TV, and I did not know if the audio would be good or not.
The audio will produce exactly what the Airpods are capable of, which I think are fairly adequate for what it's worth.
I tried it just out of curiosity.
The sound quality is the same as listening to another product with airpods. In terms of if they work well with the apple tv, I think they do. I generally don't use headphones when watching tv, so I might not be the best person to provide an answer, but the sound was clear.

Wearing AirPods is a good option when others do not want to hear the TV sound.
Often, I'll wear one Airpod for the sound and then I can hear if others are speaking to me.
A very social option.
