I have recently bought AirPods and noticed my left AirPod makes a slight hissing sound when not playing anything. It’s like a constant background white noise. It is slight and noticeable only in a quiet environment.
I’ve been reading different things on this « issue »... so my question is, are my AirPods defective ? Or every pair does that ?

My pair of AirPods does not do that. So it could either be a Bluetooth reception issue, which you can try repairing the AirPods to the iPhone. Also, make sure your software is up-to-date with AirPods as well.
