how many sets of AirPods are able to connect to the ATV 4K at the same time? I have a baby on the way and thinking about how to keep the noise level down.

It can't play to multiple sets of airpods simultaneously, if that's what you're asking.

Won't happen - the only device I know of that can do this is the Galaxy S8/Note 8 and only because it has Bluetooth 5 and/or a specially designed chip that supports this.

Gotcha. I was reading up on Bluetooth 5 last night. It does support connecting to two audio devices i.e AirPods. But AirPods are not running Bluetooth 5. Is there any info on when airplay 2 is coming out?

There are a lot of conflicting responses as to whether or not Bluetooth 5 is the reason the S8 works with dual audio - as far as I know it is not part of the Bluetooth 5 spec in any way, so Samsung is probably doing something else. Whether or not BT 5 is required to have enough bandwidth to do multiple devices, I don't know.

It doesn't require the devices you connect to it be Bluetooth 5 to work, all A2DP headsets work with dual audio on the Galaxy
