I am extending my wireless network originating from my mid-2013 Airport (wireless AC) by using my 2011 Airport (wireless N). Does this throttle my entire network back to wireless N?

I ask this because I have a late 2013 MBP with AC, but it is only connecting at N speeds. Is there a way I can force the MBP to connect directly to a wireless AC band within the network?

Yes.

Not with non AC devices using the same wireless network.
