I'm thinking of buying airport express to listen to my music through my stereo speakers. Can I use it solely for this purpose? I have my internet running through a BT Homehub router and don't want to change this. I only want to use it for music. Also, if I buy the kit does it include everything needed to set up the speakers connections?

Yes you can do just this, I use mine for music and printing only.
It doesn't come with everything you need, you'll need to buy either a TOS-link cable or a 3.5mm jack to RCA adapter.
