Will an Airport Extreme base station serve as a straight up access point? I have no desire to plug it into my cable modem as I already have a nice Cisco router handling that. I want to just use the Airport Extreme as an access point (for wireless-N) and also printer sharing. Anyone doing this?

Yes, works fine as an access point. From memory, when you first plug it in it displays some kind of NAT error, basically because it's defaulting to router mode. You follow the directions to set it up as just a WAP, and it works fine. Don't be put off if the front light stays Amber, it will stay that way until you switch on WEP or WPA
