Here is the scenario. If I keep an old mac mini to play DVDs, is there an app that would allow me to touch screen control that mac when I run the mac when it boots or what not? That way I don't have to keep a monitor/keyboard/mouse connected to it. Just the computer I can boot up an then control.

If you use Boxee, there's a great free Boxee app for iOS.

Or if you turn on screen sharing, you could get a VNC app.
