My hardware setup for music playback in my office is a MacStudio running Music -> AirPlay (Apple Lossless encoded files) -> Yamaha network receiver. This works well and sounds fantastic.

If I download and add ALAC-HD encoded files to my Music library, I suspect this will still work. My question is whether those same files will play back on my iPhone (even if they are down-converted).
 
To (not completely) answer you:

Ditch Apple Music AFTER you checked that your Yamaha has either Tidal-connect or Qobuz-connect. Then switch to one of those. Because Apple still keeps mumbling that you can hardly hear the difference between AAC and high-res music and does not seem to make a serious move to implement an easy solution for those who can hear a clear difference.

And otherwise read this: Apple info It's a long explanation that Apple uses to answer your question. I myself switched to Qobuz connect. Easy from iPhone, and Mac and automatically switches from which divice you use. You can also set the volume within the app and be independent musically from the limited possibilities that Apple offers you.

But CHECK your receiver first! before you take the free one month option.
