So. When I first got my Apple watch, I transferred an album over just to try it out. Fine. It was there, worked. Great!
Then I got a new iPhone. I went through the unpleasant process of pairing the watch with my new iPhone. Worked. Great!
However. I missed something along the way, I guess. Here's why.
When I open the music app on my watch, the album is there.
When I open the Watch App on my phone, go to music, it says there is 1 album there.
But the album is not listed in the "Playlists and Albums" section.
So I can't remove it.
If I add the exact same album in the watch app, there's no status that it's adding music of anything. Just lists the album.
If I add another album, the watch app lists "2 albums."
If I delete the "stuck" album using the watch app, the watch app still lists "2 albums."
If I delete the newly added album using the watch app, the watch app lists "1 album" and there are no albums in the list.
The album remains forever, permanently on my watch. Luckily it's an album I like, but that's not really the point.
How can I delete this album off my watch? I'm ready to do a reset/factory restore but I hate doing that and that's kinda what got me in this mess in the first place.
 
I just deleted one that had same affects as you describe (showed up as "1 album" on phone but no title). I went to music on watch and scrolled through till I found albums downloaded and found the stinker. I deleted on the watch, now it shows "no music" on watch app on phone. I hate having watch being taken over by me playing music from my phone. All good now. Also deleted "Now Playing" app on watch.
