Today I noticed that all my Apple Apps were updating on my iPhone X. In the App-Library and HomeScreen I noticed that all Apple-distributed Apps updated today (Calendar, Mail, Notes, ...) . I did not trigger any updates and never saw that behaviour before, so I was curious if anyone ever noticed something like that or could give an explanation?

I thought Apple only would roll out updates via iOS updates (besides iWork and such, which are distributed via AppStore).

I'm not sure what you saw, but there are not separate updates for the apps that come with iOS.

Yeah, it was weird. All the icons had the circle/pie filling, like an App was being updated.
