When going into the 'Movies' section of my ATV (series 4, up to date OS), 'All Movies' claims I have 100 (I actually have more than that, but that's another issue), yet when I select 'All Movies', and scroll through them, it's only showing me 24 of the 100.

I've gone into iTunes and found there were like 7 or 8 'hidden' purchases, which I un-hid, but still, 24-32 is a far cry from 100. Note that all of these are movies that were purchased through iTunes -- there are no manually ripped movies in my collection.

How do I get the ATV to actually show me all my purchased movies?

Check your tabs at the top of your movies list. I bet you have "unwatched" selected. Change it to the next option to the right. It's easy to accidentally switch to "unwatched" and not even know you did it, except for a bunch of movies that should be in the list seeming to disappear.
