I would like to know if there are other ways to use osx and its applications, besides keyboard and mouse.

I know about speech recognition. Recently I found about opera browser gesture-based internet surfing.
Maybe there are other programs that use isight in order to take commands from our face expressions.
Of course, from hardware side, there is also trackball, tablet surfaces etc

These technologies are right here, but I am not sure if somebody here has ever used any of them with success.

I would like to read about your related experiences.

Speech recognition has been in Mac OS for years and years. Nothing new there but as a way to use a computer it is rubbish (on any platform) except for dictating letters and so on.

Facial recognition seems pretty pointless to me. What commands would you issue through a certain expression?

The only really practical methods you have mentioned are tablet surfaces (more specialised though) and trackballs.
