Alternative to clean install: delete old app data

I didn't want to go the clean install route but I do want to clean up my system. I've been deleting old apps and searching for their associated files.

1 - Is there a more thorough and automated way to delete old unused app files?

2 - What's left over from previous operating systems when you install Yosemite?
