I'm sure you are too.

Mainly, the only reason i'm dying to jailbreak is the ability to rearrange apps within iTunes 9.

I know the Mac OS X app "movement" can do this but simply, I hate the functionality of it.

How can I be notified or aware of when 3.1 jailbreak for the iPod Touch is available?
 
I am waiting. Do you really think that the app organization is gonna work with a jailbroken phone? i doubt it since there are a ton of jailbroken stuff iTunes won't recognize. Five dollars says it doesn't work OTB.

See I think it would. All of my jailbroken apps appear in the apps section in my iTunes and i've always been able to click on them there, so what difference would it make with simply being able to rearrange them?
 
I used it to arrange 7 pages of apps after updating and to be honest did not find it all that flash or intuitive and sometimes quite laggy waiting for an icon to actually move once you drop it.
Would have been a lot more practical if all pages were thumbnailed at the bottom so you could see all of then at once rather than the current scroll bar set up on the right. It is just as cumbersome and slow as doing it on screen if you need to drag an icon from it's current position and scroll to a page that is not currently shown.
 
So how well does running apps in the background work? Does it consume power like crazy? Does it slow the whole device down?

I'm very likely getting a 3G touch, and am curious whether it'll be worth it to jailbreak.

I'd also like to know this stuff. But running apps in general sucks up battery. (Also, we need two jailbreaks. One for the 3G and one for the 3.1, if it's like the 2G [Where we had to wait a bit].)

You are right I didn't think of it like that. Well hopefully they will have the 2G one out soon.
 
i just updated to 3.1 and i'm actually kinda liking it, the only thing i used Jailbreaking for over the summer was bosspref's or whatever so my Touch screen wouldn't shut off when i had it hooked up in the car via Aux. (it was Auto Lock: off)

oh, and i had the Five Icon Dock, i do miss that...

Um. Yeah? Granted, my iPod is a RESTORED jailbroken one, but it retained several of the jailbreaking things, one of which is the blank apps i put on (along with the 2 hour backup and syncing times :D)
