I am pretty annoyed how both IOS and OSX work with spelling.
If you type a text and the spelling thinks it wrong, it will present a ballon near the text with the supposed spelling. If you go on, the spelling will change your text to the suggested text by default. This annoys me very much , because you have to click on the little cross next to the suggested text each and every time or have a text that makes no sense at all.

Is there any way that you can change this spelling correction behavior in such a way that your text will stay unless you click on the suggested correction instead of the (annoying) other way around?

For OS X:
System Preferences,
Language & Text pane,
Text tab,
Correct spelling automatically checkbox,
Unchecked.

Some apps have a per-app option:
Edit menu,
Spelling and Grammer sub-menu,
Correct spelling automatically.

I don't think either of those is exactly what you described, but at least it's not always auto-correcting.
