If I get the 15" Powerbook with the stock 512 ram, and I want to max it out to 2 gigs, is it best to buy 2-1G Dimms from Crucial and just sell the Apple ram, or can is there a way (and it is recommended) to mix 1.5 gig Crucial Ram with the stock apple ram?

I don't think you can get 1.5GB DIMMs.

You must either get 2 x 1GB and sell the 512MB Apple one, or get 1GB 1-SO-DIMM when you order from Apple and then add 1GB from Crucial, or get 2GB straight away from Apple.
 
Upgrade the Apple memory to a 1 GB stick. It's a 2 stick limit in the PowerBook. And you will want Apple memory around in case of problems, as Apple warranties don't cover issues resulting from non-Apple memory.
