Planning on replacing my old iMac.

Setup would be:

mac mini
studio display
work HP laptop
HP Thunderbolt Dock 120W G4.

Currently the work laptop is plugged into the Thunderbolt dock, along with wired mouse and keyboard.
My iMAC is separate and runs with wireless mouse/keyboard.

Would I be able to use both computers with the studio display? Trying to cut down on having to use 2 monitors (ie. iMac and a Dell monitor currently).

Also, if I am able to run this setup, how would I switch the Studio Display from one computer to the other?

I would advise reading the (long) thread about two computers and one Studio Display. It will have all the information you require.
 
You'll have to switch the display cable every time, but if you get lucky and the existing Thunderbolt dock works with both the new Mini and the Studio Display, then you can just plug in the display to the dock and switch the dock cable between computers depending on where you want to output video. If the dock is not compatible, you could replace that dock with something like caldigit ts4 one, and that will work. The idea is that it would be easier to switch the cable on the dock sitting on your desk closer to you than on the Mini, especially because the Mini has no ports in the front.
