I'm designing a game for the iPhone, and I'm at the stage where I need to drill down into various implementation choices.

The first decision was around designing my own physics engine to keep track of moving objects, however, i now see there are a number of open source engines that I could use instead of writing my own.

If you think of a 2d pool game (overhead view), balls bouncing around, slowing down, colliding, entering pockets, etc. I think anything that can cope with that would also meet my requirements.

I've been reading about
Bullet
ODE
cocos2d

Does anyone have any experience with these engines? Any advice on what would be a good fit for me? Learning something new isn't a problem.

Also, I'm assuming that the Quartz 2d APIs are not going to be flexible enough for my needs.
