I recently chose set up as "new watch" vs "restore from backup" when pairing my new apple watch to my iphone. The only data I really care about is the health and fitness data from my old watch, which is already on icloud and will be synced to my new watch automatically. Or are there any important reasons to "restore from backup" when pairing a new watch?
 
Be careful. Activity data is not on old devices/watches but related to them. I just removed some devices due to a weird pairing issue and lost ALL of my activity/circle history. Yeah, not happy.

FWIW, when I get a new watch I always setup as new. This led to having many watches linked to my iCloud... which led to ‘cleanup’ fail.

Did you have data issues when you unpaired the older watches? I am going to unpair my older watch so I can sell it.
