I'm going to be at a time-share out of town during the 5s' first week of availability. Can I give that address as the iPhone 5s shipping destination when making an online order?
 
On apple.com yes.
When ordering through the carrier it has to be shipped to the billing address.

I have had trouble with changing addresses for apple.com AT&T iPhone orders before, and the request can be refused even depending on your payment methods. I spent at least 90 minutes on the phone with them about it last year. This year I updated my billing address to be my work address so I can just have it shipped straight there.

I hear you, it's a pain when you know no one will be home to sign for it and they won't let you send it elsewhere.
 
I had my address set for work and even the card used work address but but shipping defaults to my home address and I could not change it this time to work like I did last time. thats att.
