Any iPad apps that can WebDAV -> iBooks or Stanza?

Dropbox for the iPad can launch an ePub via Stanza or iBooks. Is there a WebDAV equivalent?

I haven't tried it myself but Goodreader is able to connect to WebDAV servers and open files in iBooks so it should be able to do what you want.
