I have a 2021 GMC Truck with CarPlay and it works very well with my iPhone 13mini on iOS 18. If I lose CarPlay functionality, it would be painful to me. Has anyone converted to iOS26 with a GM vehicle and did you experience any issues with CarPlay?

It should not be an issue. If your truck does CarPlay on iOS 18, it will work with iOS 26. CarPlay uses the vehicle infotainment as an extension of the phone's display, nothing more. If it works now, it will work then.
It would take a software update to the GM infotainment system to disable CarPlay on your truck.
