My battery is down to 75% and I dont want to replace the battery for £100. Could this damage the watch?
 
No damage as Apple swaps the old Watch with a re-furbished Watch. Basically get a brand new Watch.

Apple doesn’t replace the battery, they give you a refurb for that money.
Do it yourself at your own risk, same with repair shops. You almost definitely will loose water protection

I’ll try and hang on for another 10% drop, then reconsider what to do.

You can purchase a 3rd party battery and replace it yourself for considerably less. Depending on how comfortable you are taking apart small devices, there are many video's online outlining the procedure
 
Just thought of another issue. My watch works fine and has been proven reliable over 4 years, with up to 6 years warranty in UK. However, if I have the battery changed (i.e. have a watch replacement) the warranty is then only 90 days. Makes the decision harder.

The warranty should carry over for a repaired device so that the longer of the two periods is what takes precedence.
