I have a stock AT&T 4S running 5.0 with 1.0.11. Does the current version of redsn0w work to preserve this baseband during an upgrade to 5.1.1? Is there even any point in preserving this baseband anymore, since it seems that the unlock game has changed with the A5 devices?

It might be worth keeping.

Redsn0w should be able to cook a NO_BB IPSW for you to restore to. Just make sure you use Redn0w to enter Pwned DFU before restoring.

Redsn0w will not preserve the baseband since there is no bootrom exploit for the A5

So basically if a 4S user wants anything higher than 5.0, it means updating the BB too?

Right. My 4S has been unlocked by AT&T, so I saw no reason to preserve the baseband. Also, I think the newer basebands bring some battery improvements; I noticed my battery life went up when I used redsn0w to restore 5.0.1 (which requires updating the baseband to the latest anyway)
