I have been looking around, but couldn't find any, are there any retina ready websites out there? The only one I can see is the apple home page and iPad section.

Websites aren't "retina," specifically. What you're referring to is going to be graphics/pictures on the sites that aren't a high-enough resolution, thus come across as blurrier than they would otherwise if they were higher resolution. Amazon.com looks pretty horrible on the new iPad because their artwork is pretty low resolution.

NYT.com looks very nice on the new iPad, though... Also, I would not expect many web-sites to change over night. The iPad may help other computers/tablets embrace high-resolution, but it's not going to be a speedy transformation.
 
I think the NYTimes website has its logo set up as a SVG. It looks pretty good. The app is better though obviously.
