I have the Sony PS3 Wireless stereo headphones.

I use them with my iMac also, its a wireless dongle goes in the iMac USB port and connects fine. However to switch the output from the internal speakers to the headset, I have to got into System pref, select sound, then chose them in there.

Is there any way to do this quicker and/or with a shortcut in the menu bar?

Try holding down "Option" when you click on the speaker icon in the menubar.

I did have the sound icon in menu bar, but was just for volume control, is this new in Lion or always been there?

I believe that shortcut was available starting with OS X 10.6.
