Is there any way I can edit the iPhone folders (such as app settings etc) through USB? I don't have a wireless network so I can't connect through WinSCP. I also tried iPhone tunnel Suite 3.0, but it doesn't support iPhone 3GS 3.1.2. So is there any software I can use to edit the folders or do I have to find a wireless network?

iPhone Explorer, Disk Aid, and iFuntastic come to mind for the Mac. The last one is a pay app. The best thing about these apps are that they don't require a jailbreak for most file operations. They can be fairly clunky though.
