The screen will dim after a few minutes of game play and you have to touch the screen to bring it back to full brightness. It seems to be triggered in games that do not require touching the screen - like Crash and Monkeyball.
 
I find this very annoying as well... You would think Apple would have figured this one out... That if an application is open then keep the brightness up and don't turn off... Guess we all have to wait for 2.1 or 2.0.1 to come out
 
The screen dims about 30 seconds before the time you have autolock set to (ie if you have 5 minute autolock the screen will dim at 4 min 30 seconds) to stop this just turn autolock off.

Remember, even with autolock on "never" if you manually turn the phone off and a button gets bumped it will still only stay on for 10 seconds before going back off, so you don't run the risk of the screen being bumped on forever once you manually turn it off after use.
