I really love the search function in Mail and find it a lot more accurate an useful than a Siri search. I use it all the time but hate having to go all the way to the right to click a small icon for what to me is the most important function in the program.

I've searched and tried whatever I could but I can't find any way to rearrange the task bar in the Mail program. Does anyone know how to do that, or is it possible?

View > Customise Toolbar. However, it seems that the only way to make the Search field start full-sized is to delete enough icons to make room.

From Mail--click on the the View menu, then click on "Customize Toolbar...", or, even easier, right-click on the toolbar. You will see a menu drop down, where you can choose the same item "Customize Toolbar"
After clicking on Customize, you will see all the icons in your Mail toolbar will be gently moving around.
Click on that Search icon, and, while holding the click, move the Search icon to a location that you prefer. Release that click, and click the "Done" button. And, there's your Search icon in a different location on your Mail toolbar.
You may need to fine-tune after that first try. As noted above, you might experiment until you get your best choice of location for your Search.

Thanks ever so much. I should have seen that myself but missed the Customize Toolbar. Much better now!
