So my Apple watch always comes short on a run and I believe its because it rounds corners etc so much. I took both AW 7 and Garmin Forerunner 255 out this morning. AW 7 was without phone using watches GPS, The Garmin was set on All Systems GPS + Multiband.

Garmin is blue, AW Red, As you can see the AW cuts corners too quickly, On the Garmin you can see the point where I crossed the road, the AW just kinda blurs it all together.

This is the result, AW short, this was a small run just over 5k, Imagine the difference on a 10 miler or Half
 
Apple Watch Ultra has dual-band GPS, if you want more accurate tracking.
 
Out of technical curiosity: did you ever try to see wether this “improves” when you carry additionally an iphone with you?
