its great that you can say 'hey siri open timer and time 3 minutes' especially when you are cooking but when you are timing your poached eggs and the timer goes off but your hands are full and you are trying to get the pot off the ring its really annoying that your wrist is vibrating non stop,

ive tried 'hey siri stop' 'hey siri turn off timer' 'hey siri done'

is there any way to get it to shut up without using my hands?

I usually say “hey Siri cancel timer”. Works every time

Not on the :apple:Watch. When the timer is sounding and you rase your wrist you get the Timer face and NOT the Watch face and saying "hey Siri" doesn't get any response. How are you getting Siri to work on your :apple:Watch with the timer sounding?

After the timer has already finished counting down, the nose or left eye is the correct way to make it stop vibrating.

You don’t have to say open timer. You can shorten it and just say like you would to a person “hey Siri start a 3 minute timer” or as if you were looking at a person “hey Siri 3 minute timer”
 
Use a reminder instead of a timer for 3 minutes.
I just tested it and the reminders countdown exactly 3 minutes and they do not come on at the top of the minute so if you say " remind me the eggs in 3 minutes" it will count down 3 minutes 0 seconds.
