It's happened quite a few times but the other night cooking dinner I said 'Set timer for 100 minutes' and instead of responding 'Setting for 1hr and 40mins' I got..

'Setting timer for 1 minute'

then when I asked again for 100 minutes

'Setting timer for 7 hours 42 minutes and 38 seconds.'

I then asked for 1 hour and 40 mins and it worked... trying 100 minutes again today and it's working as expected.

Not experiencing that specifically and have used Siri to set quite a few timers over the last week. However, I never really try with “complex” requests like that.
 
The request seemed simple, set timer for 100 minutes... it was the randomness of what it actyally did as I say. Updated OP for clarity.

Did you have the TV or another audio device playing as you spoke, such that Siri may have heard you wrong? When that kind of thing happens on my Amazon Echo, I ask "Alexa, what do you think I said?" and I can hear how (often comically) she heard me wrong. Don't know a way of doing that with Siri though.
 
I wouldn't say that it was any different to other times pre watchOS 10 that I did it but yes, I accept there may be some difference in the processing which is now analysing the sound differently and could have picked up some background stuff. it wasn't particularly loud though and I was speaking directly to my Ultra right up to my face.
